At all times, including while being stored, prepared, displayed, served, or transported, food shall be protected from potential contamination, including dust, insects, rodents, unclean equipment and utensils, unnecessary handling, coughs and sneezes, flooding, drainage, and overhead leakage or overhead drippage from condensation. *20  Observed the sanitizer solution to be too weak at the following location(s): 1) restaurant, 2) butchers area. Provide for the sanitizer solution to be mixed to the appropriate level for the type of sanitizer being used. Remixed and tested at 100 ppm. (750.830) Immediate/Onsite
Observed the following food products to have improper/no labeling information: 1) repackaged meats in chest freezers in back. Provide for all foods to have proper labeling information such as item name and date. (750.120) Next Inspection
Observed employees using improper utensils to dispense chicken breading mix. Provide suitable dispensing utensils to be used by employees such as a scoop with a handle. (750.280) Next Inspection
15  Observed the following improper non-food contact : 1) rust on racks inside 3-door cooler in restaurant, 2) broken molding on front of 3-door cooler at bottom, 3) rust on lower shelf of stainless steel table in butchers area, 4) rust on inside of chest freezers by butcher's area, 5) missing handle on 1st chest freezer in butchers area, 6) rust on metal shelving in walk in cooler, 7) rust on wire racks in back cooking area near stove, 3-bay, ice machine and chest freezers, 8) aluminum foil on shelving near stove. Provide for all food contact surfaces to be smooth, easily cleanable, non-absorbant, corrosive resistant, and light colored. (750.690) Next Inspection
